Backstraps

Wow! I'm hungry...![smile]

I've got two whitetails in the freezer and I'm trying to pace myself with the backstraps.
Been doing some great chilis and stews lately.
If I don't grill the BS, I do the butterflies in a cast iron skillet with a side of a sauteed mushrooms and onions, brown rice and steamed veggies.
Freaking outstanding.

Cast iron on a hot stove is insane! The meat comes out cooked to perfection if you do it the right way.
I set my oven to 210 degrees. With this piece I brought internal temp to 98 degrees. Pulled it. Brought oven to 525, sprayed backstrap with a little olive oil then into the oven for ten minutes.
