That's right. Because if the world collapses we will need to be able make baguettes to survive 
Started down this rabbit hole a few weeks ago. Getting flavor, a good crust and strong gluten development (the holes) has been tricky. I think part of it had to do with the elevation I live at and the lack of humidity. But this one came out pretty darn good.
