If anyone has access to a list of serial numbers and date of manufacture, I am curious to know what a SW 1911 with serial number prefix UCK**** was likely made.

I can't answer your question directly, but there is a book on S&W guns that lists the ranges/dates of S/Ns by models in the back, I don't have a copy handy. Also a call to S&W's customer support during the week hopefully should answer the question as well.
