I'd tried firing a Glock 21 many years ago, but the gun was just too big for my hands. Now does the Glock 30 have a similarly thick grip? Also, are the difference between the 30's and 30SF's grip circumferences noticeable?

Yes, very much so. Stick to a 30SF or a Gen4. The older guns are dramatically worse for people with small hands.

You might also consider the Glock 36. It is a single stack .45 instead of a double stack.
I'm not sure how small your hands are, but Mine are small (like a girl) and I don't really have an issue shooting a 30S other than the mag release would be nicer if it were the same size as the Gen4's. I also have a Gen 4 23 and have no issues with that one either.

I have a Gen3 30S (basically a 30SF frame with 36 slide from what I understand) and it feels good in my normal sized hands. I'm not really a Glock guy but I actually like it. I chose the 30S over the 36 for the extra capacity. (10 rounds vs 6.)

I have them all, and there is a huge difference between a 21, and a 21SF. Also have 30SF, 30S, and 36. 30S and 30SF are identical frames, "S" has a 36 slide on top. The 36 looks good on paper, but you should absolutely try one and see how it fits in your hand. The pressure points on the narrower width and palm interface fit very different from the double-stack Glock models. Gen4 double-stack models have flexibility with different rear backstraps in place. No strap is very tiny, with the 'm' medium strap resembling a "SF" model.

Depends on the caliber.... the doublestack .45 and 10mms are the same as an SF with no strap installed on the Gen4. You're right though when talking about the 9/40/357 Glocks, though, an "M" strap is the same as its 3rd gen counterpart.
