I'm looking at adding a big bore rifle to the safe.

looking at: 375 h&h, 444 marlin and 45-70 govt.
the 375 I was looking at was a ruger no.1, the 444 is a marlin 444 and I haven't made up my mind on a 45-70 (but would most likely be either a no 1 or a lever...)

it would be for general shooting at the range, and moose. I have a 308 for deer and other critters.

I appreciate any insight on any of these. (Recoil, accuracy out to 200 yards...)

Hey ad, what about a buffalo rifle in 45-70? Like a NEF, or even a pretty browning low wall/ high wall? Recoil on a high wall or buffalo rifle shouldn't be too significant, and accuracy out to 200 should not be a problem.
 
I had a Ruger #1 in 375 H&H. It was pretty fun to shoot, if a little expensive to handload for. I had dreams of shooting a deer with it and carried it for a season, but the thing weighed a lot and I sold it off.
Recoil was a really powerful shove to the shoulder, instead of a hard smack like a .300Win Mag.

Accuracy was as good as can be expected, probably in the 1-1/2-2MOA range, which is about all you are going to see out of a Ruger #1. You are also fighting a flinch when dealing with a 375 off of a bench looking for small groups.

Are you looking for something you can mount a scope or will iron sights be enough? If that's the case how about a Shiloh or C Sharps pricey but fun and a serious drool factor. Look at KTP on a regular basis they have used Sharps on a regular basis. You might want to look and see if the Browning/Winchester 1885 SS are being made. I have 2,1 in 45/70 and the other 40/65 Win. The 444 is over rated in my oppinion,anything the 444 can do the 45/70 can do better. With the right handloadsthe the 45/70 can be loaded near 458 mag power levels. Too bad you aren't closer I'd invite you to try my 45/70.

I would purchase a botl action Wincehster Moel 70 min either 375 H&H or 458 Win MAg. Handloading you can get the 375 H&H to as low as 38-55 velocities and the 458 Win Mag to 45--70 or lower velocities. Both very accurate rifles.
 
I was at Rileys in Hooksett on Friday and saw a quite a few Marlin lever actions in both .444 and .45-70, I love the Stainless Guide Gun with the 18" barrel.
 
Had a marlin 45/70 guide gun. Didn't shoot it much, more of a novelty than anything. Did a couple outings hunting with it but never had the chance to bag a deer with it. I will say, it was both awesome and brutal to shoot.
 
get a 45-70

Its an very versatile cartridge, you can load it mild to wild. Factory ammo is available everywhere, not so much with the others you listed.
