Mosin Sporter Project vs. New Rifle Project

Hey everyone, this is my first post here and I'm looking for a little guidance.

I've been thinking about doing a little sporterizing project to my 1939 Tula 91/30 Mosin Nagant. Here's what I'd be using:
  • Monte Carlo synthetic stock
  • Rock Solid Industries scope mount
  • Rock Solid Industries bent bold
  • Rock Solid Industries bedding pillars
  • Millett TRS 4-16x50mm MIL/MIL scope
  • Millett rings
  • Roller ball adjustable match trigger
  • Removal of front and rear sight, and removal of front sight block and rear sight dovetail
  • Glass bedding stock and free floating barrel
With gun smithing cost of sights I would expect to pay in the $800 neighborhood for all the parts, with all installation labor done by me.

However for that price, I've been considering some other options. There are a few new rifles that would most likely me more accurate out of the box, and have more potential down the road for improvement:
  • Savage Stevens 200
  • Marlin X7
  • Weatherby Vanguard 2
The decision for those rifles would be chambering them in either .308, 30-06, 7mm-.08, or .270 Winchester. No matter which rifle I choose, I would still be glass bedding the stock, and free floating the barrel. I would also still be using the Millett TRS scope and a DNZ Gamereaper 1 piece scope mount. I know that the Marlin and the Stevens are very similarly priced at anywhere between $300-375, while the Weatherby is anywhere from $415-475 (approximate prices I've seen on Gun Broker).

The scope and mount would run me about $330 from Optics Planet, since I have a 5% off coupon. The stock bedding kit would be around $35, so total I would be looking at a price range of $700-800 which is actually a bit cheaper than the Nagant. I think the Nagant project would be cool, but it's a less capable platform and I would be hacking up an old rifle. However, it would be something a little bit different than just your standard off the shelf rifle. Accurizing a new rifle is going to yield better results, but at the same time it won't be as fun as working on the Nagant.
