My ARs are a Stag M4gery and an Olympic Arms Ultra Match.

I also have a Colt complete lower that needs to be finished. Since I already have two ARs in .223, what should I do with my Colt? I was thinking about picking up a Bushmaster 24" Varminter upper but now I'm not sure I want another AR in the same caliber.

I was thinking of .50 but I don't reload. So what should it be? 9mm? Something else?

When you say .50 caliber I assume you're refering to the .50 Beowulf and not the .50BMG. I've shot the .50 Beowulf and it's powerful but pleasant to shoot. That or the 6.5, 6.8 or the .30 Rem.AR would make good hunting rounds. For plinking I have a 9mm upper and a .22 conversion kit for my M16. They're great fun and the 9mm is very accurate. Right now the cheapest centerfire rifle ammo is probably the 5.45.

I built a Stag lower for exclusive use with a 22LR upper. This isn't all that easy as I wanted a crisp match trigger. 22LR ammo is harder to ignite than .223, so I had to find a match trigger that used a stock power hammer spring. Accuracy Speaks in AZ provided the trigger for the lower and "Model 1" provided the upper. This project wasn't cheap, but now I have an AR that I can shoot for short money and the savings on barrels and ammo will allow this AR to pay for itself.

I put over 20,000 rounds through the last 22LR upper I owned. That saved me a lot of money, considering the cost of AR ammo and barrels. The average AR barrel is toast after about 10,000 rounds. If you shoot a lot, a dedicated 22LR AR is a good idea.

I already have my next build planned.

6.5 Grendel and plan on setting it up to be a tack driver

As far as Noveske goes, you want the good stuff, you have to pay for it. Noveske, LMT and the LEO/Mil Colts are built to different standards than RRA, BM, Oly and such. Before you decide what caliber your gonna shoot, decide what its purpose is going to be.

why not build an AR Frankenstein? Bushmaster 16" h bar upper, with a a3 detachable handle ,Rock River Arms Lower receiver, with a EOTech weapons sight combined with a Eotech Magnifier, 2 piece quad rails, forward folding grip and a Chip McCormick AR-15 Trigger and dotn forget the telescoping butt stock ... then you will have one mean son of a gun AR!
