How does chicken come out? Seems to me like the process would leave it soft and over cooked.

All poultry cans beautifly. It retains its texture and is even better when you season it first. I raw pack de-boned, skinless chicken. never had a bad batch and we're eating poultry I canned 3years ago. Taste is fine.

Just a reminder, a $40.00 WallMart pressure cooker does the same thing a more expensive "pressure canner" does only for less money.
