Nice job with bacon! The smoke on that is amazing! It is on our list of to do's. Once a year we get a pork belly and make a pile of that stuff.Salt cured and smoked bacon from the pig above.

For storage, and rotation, have any of you used Keystone Meats? I recently heard of them from friends out west and they love them.

Averaged 5 years. That is why I always include the 'rotation' in storage.What's the shelf life on that stuff?

That is bad ass I’m totally jealous.Spent all weekend clearing and putting up 250ft of hog fence. Shout out to my neighbor who cut the birch out for me last week. My youngest and his buddy worked about 20hrs with me over the weekend. Including in the dark and rain. Troopers. Still have to go back and put all the fence clips on T posts, finish adding hog panel to the 3 gates, and put up the electric fence. Pigs arrive Saturday so no rest for the weary this week.
