There is a new standard, NMEA2000, which is Bosch CAN based:

The data format depends on the GPS. Most output some NMEA format over serial in plain text but many manufacturers also have proprietary formats and you have to configure it. Are you trying to read position data in real time or would a track log post processed be OK? A lot of consumer GPS are now capable of logging track data to microsd cards and provide tools to manipulate the data including KML mapping tools like Google maps.
