More on the beef spectrum really. Deep red meat. Breast steaks cook like a round steak, gotta keep it medium rare to not overdo it though.

I am guessing like shit. I roasted the heart and neck for broth and I just pulled the plug on it because it tastes like bland shit.
Now I know it is not worth the squeeze. Screw that.

The livers are good. Cook them in rendered fat with garlic and onion then grind with a couple bold eggs to make pate.
