Yup but does it warrant being drawn on?
YES! Endangering the lives of everyone else on the road with a deadly weapon (bike) is grounds for having a weapon drawn on you. Have you ever been in the situation? I have. I didn't get 1 gun, I had 5 on me in seconds and one pressed into the back of my head. Did I deserve it? YES! Did I cry about it or expect anyone to feel bad because I made a poor choice? NO! I dealt with it and sold my car shortly there after so it would never happen to me again, and it hasn't.
Stop trying to justify the actions of a criminal. The cop was protecting himself until the threat was gone. He didn't keep the gun out longer than necessary or even point it at him.
So how should Cops handle potentially dangerous criminals? Walk up with an ice cream cone and hope for the best? Get real. Your argument is bogus.

I drive a crotch rocket myself and if I was doing the same thing, I would expect to get treated exactly like that rider was treated.
