Damn, that's a lot of elk. Did you seal it in vacuumed bags? I'd be curious about how long it would last before freezer burn sets in. Very cool, good on you BTW.

We will vacuum seal but the quantity was too much here. We use seran wrap, wax paper then butcher grade wrapping paper. In twenty years I have never had freezer burn using this method. We have had meat in the freezer two years this way. But we usually wipe everything out in a year. It's as good, if not better than vacuum sealing in my opinion.
