Boneless neck roasts. This just half the neck of one deer. First time I have gone boneless. Just follow the contours of the bone with the knife and peel it away. Almost zero waste.

Just butchered backstrap in butter with an egg over easy, also sibe in the butter. You can never have enough butter.

That last chili i made was the best pot I've ever put together.

Used this recipe from stalecracker even used his Cajun 2 step seasoning. Only thing I did different was used venison sausage and just ground venison. He used pork sausage and ground beef as well. The guys crazy but his cooking videos with what he makes are actually pretty darned good.

Another batch of venison chili. I got steaks cubed up in it. Got a pot luck for work thursday I've made baked beans and venison chili for folks at work a few times. I had multiple people ask if I'm making baked beans.....or venison chili. Guess I'll have to make both lol. Making the chili tonight and I'll put 2 pots of baked beans in the oven tomorrow when I get home from work.....8 hours to bake they'll be done around midnight. Lol

I looked at the sign up sheet for the pot luck today.....some dishes were

Brownies
Chips and dip
Salad

I mean.....come on people let's see some effort

Butt tenderloin (that's what I call it) stir fry tonight. This is one of the best cuts of meat. Hind quarter hidden behind the exterior muscles. Most people don't even know it's there and just grind it up.



Edit: I think it's called eye of round.

Elk tenderloin with pasta. Sauce has cheddar cheese we cold smoked. It did not suck.
