I looked but a thread did not pop up. My almost son in law shot a turkey the other day. I hate to waste any part of an animal, so I try hard to save almost everything. Hey, I will try anything once.
So I skinned the bird, and deboned the entire bird. Next we ground the meat along with almost a pound and a half of homemade bacon. Salt, pepper, brown sugar, fresh oregeno, cinnamon, nutmeg, diced onions and two diced apples. Then mixed it all up and and made into sausage patties. I cannot take credit for this one, it is a Steve Rinella recipe. What a great breakfast sausage. And, I achieved my goal of not just using the breast and throwing everything else out.
I will have to share some deer recipes as well because I have been saving the ribs and smoking them and slow cooking whole necks in broth and wine. I bet you guys have some great food you make. WOuld love to hear some of your favorites. Pete
