I have a double stack 1911 (Para P14-45 from the mid-90's) and the grip profile is very close to a single stack 1911. The grip panels are thinner to make that possible.
If you have any concerns, locate one where you can finger it and see for yourself. Don't just assume that the double stack grip profile will be thicker than a single stack. Unless they (the manufacturer) specifically call out that it is.
